Sorry, but using the correct knife (a flexible filleting knife) and the most effectively method would just leave the pin bones to pull out with tweezers. I cannot understand why anybody would want to demonstrate skills and they have not yet mastered.

Don't open the back side, directly cut off the first fillet buy return when you cut behind the head, with a fine knife not a deba you can filleeting without cutting vicere. it's 4x more speed and the fish blood isn't go on your plate.
